How it all started

Mike Woolridge has spent most of his life in the service industry, working his way through kitchens and dining rooms while putting himself through school. For a time, that path led him into emergency medicine, working as an EMT and responding to 911 calls in Los Angeles.

Even then, restaurants never really left. On weekends, he found himself back behind the bar or in the kitchen, drawn to the rhythm and energy of it.

After returning to Ellensburg in 2017 to be closer to family and the place he calls home, something clicked. The pace, the people, and the sense of community brought him back to the kind of hospitality work that had always felt most natural.

Around that same time, he was introduced to ramen in a way that stuck. What started as curiosity turned into years of learning, experimenting, and refining. He was making noodles at home, studying the process, and making trips across the state in search of great bowls.

Over time, the idea became clear: to build a place in Ellensburg that reflected both the craft of ramen and the community around it.

This restaurant is the result of that path, shaped by years in kitchens, time spent serving others in different ways, and a steady commitment to doing things with care.

The Art of Ramen

Creating all of the elements of ramen takes time, care, and an almost obsessive level of intention. Every aspect requires love and precision—using multiple kinds of animal bones, soaking, blanching, skimming, and boiling them to perfection. Whether it’s a 16-hour bone broth for pork, an 8-hour bone broth for our chicken and duck-based ramen, or a full from-scratch vegetable stock with eight different fruits and vegetables, we're not cutting corners.

And yes, there’s artistry involved. We believe you eat with your eyes first, and the aromatics and visual presentation are a genuine and legitimate part of your palate. Every bowl is designed to be visually irresistible, guided by the unspoken rules of color, balance, and composition. The result is something complex, detailed, and beautiful.

Our broths are loaded with collagen which make them great for your skin, packed with minerals pulled straight from bones and marrow, creating a richness and texture you simply can’t fake. We build deep, crave-worthy umami from natural sources, never adding MSG, instead relying on roasted blistered tomatoes, kombu, and dried shiitake mushrooms. It’s bold, nourishing, and delicious. No shortcuts, no nonsense.
